It wasn’t a single event, but rather motivation for thousands of events hosted in various towns, each selling vegan baked goods for a cause. Sadly, in 2020, The Worldwide Vegan Bake Sale efforts were paused, for obvious reasons. But it left a legacy thanks to dollars raised and recipes created, like these peanut butter cereal bars.

Peanut Butter Cereal Bars worthy of a Vegan Bake Sale

The founders of The Worldwide Vegan Bake Sale shared this recipe with us, but they got it from one of their youngest bake sale hosts, Meggie. She was just 15 years old when she hosted her first vegan bake sale in Tempe, Arizona. Meggie raised over $800 for a local cause, and she said these peanut butter cereal bars were a best seller.

Like most snack bar recipes, these dairy-free cereal bars are versatile. You can mix up the add-ins, using different cereals, nuts, fruit, or seeds. You can even use a different nut or seed butter to make them peanut-free. And if you need corn-free, you can use another liquid sweetener, like golden syrup or maple syrup.

For peanut-free cereal bars, substitute sunflower seed butter for the peanut butter, and your choice of seed, chopped nut, or dried fruit add-ins for the peanuts.

  • 2 cups cornflakes
  • 2 cups oatmeal (use certified gluten-free, if needed)
  • ½ cup dried cranberries (optional; or other dried fruit)
  • ½ cup peanuts
  • ½ cup sunflower seeds
  • ½ cup brown sugar
  • ½ cup light corn syrup
  • ½ cup peanut butter (crunchy or smooth)
  1. In a large bowl, stir together the corn flakes, oatmeal, cranberries (if using), peanuts, and sunflower seeds.
  2. In a small saucepan, whisk together the brown sugar, corn syrup, and peanut butter. Place the pan over medium heat, and heat until the mixture is liquefied and almost bubbly.
  3. Pour the wet mixture over the cereal mixture, and stir well to evenly coat.
  4. Firmly press the mixture into an 8-inch or 9-inch square baking dish, compacting it as much as possible.
  5. Refrigerate the bars until firm, then cut into bars.
